When life gives you lemons....

Make lemon pie.
Ingredients
1 cup sugar
1/2 cup all-purpose flour
2 cups buttermilk
1/2 cup water
3 egg yolks, lightly beaten
6 tablespoons lemon juice
2 tablespoons butter

MERINGUE:
3 egg whites
6 tablespoons sugar
1 pastry shell (9 inches), baked
Directions
•In a large saucepan, combine sugar and flour. Gradually stir in
buttermilk and water until smooth. Cook and stir over medium heat
until thickened and bubbly, about 4 minutes. Reduce heat; cook and
stir 2 minutes longer. Remove from the heat.

•Stir in a small amount of hot filling into egg yolks; return all to
the pan, stirring constantly. Bring to a gentle boil; cook and stir
2 minutes longer. Remove from the heat; stir in lemon juice and
butter until butter is melted. Keep warm.

•In a small bowl, beat the egg whites on medium speed until soft peaks
form. Gradually beat in sugar, 1 tablespoon at a time, on high just
until stiff peaks form and sugar is dissolved.

•Pour the hot filling into pastry shell. Spread meringue evenly over
hot filling, sealing edges to crust. Bake at 350° for 15 minutes
or until the meringue is golden brown. Cool on a wire rack for 1
hour; refrigerate for at least 5 hours before serving.
Note: I use 4 egg whites in my meringue and when I'm cooking for my mom (who like TART lemon pie,) I replace the 1/2 cup water with lemon.

Down on the farm...

It's still winter here, but we had a beautiful day this past Saturday. Hubby was busy doing firearms qualifications, but Papa was here and the kids enjoyed being out with him. This is one of my favorite trees on the place. You can't see it, but there is a steer head way up high.
Rancher was 'helping' chop some wood here.
There is the little ranch girl and her puppy.
The girls enjoyed all the unique cloud formations.
It was a 'warm' and slightly windy 52.

Tiny Talk Tuesday

Welcome to this week's edition of Tiny Talk Tuesday--well, our contribution to it anyway. Click the Tiny Talk link for more! My tiniest LOVES having her picture taken! So much so, that often she will ask, "picture?" She is such a priss! Loves to take baths, have her hair combed and her nails cut.
Here she is giggling--silly girl!

Kammy made donuts for breakfast this week. Definitely low-cal and carb free. A little dry and slightly stale. (They are socks)
Kammy also said this: "I know what including means. It means--And that goes for you too!"
In spite of the puppy purchase, Kammy is still longing for a horse. I have been doing my very best to discourage her by talking "horse poo and muck". As usual, she had a ready answer for that. "That is a job for the stable boy and daddy is the only BOY in our family, soo...", she said with a shrug and a grin. Of course, daddy was thrilled to hear her thoughts on the matter. Not really. Our neighbor has 7 horses and she has named them all which they say is a good thing since they have not bothered to name them.

Above is a short clip of Kaite riding Kammy's horse, Checkers. If Kammy has anything to do with it, I think Kaite will be a little cowgirl as well.
